I thought I was doing well by baking several dozen cookies over the holidays. But some people are able to do so much more. Look at this gorgeous cake. I wish I had thought of doing something like this.

Wafers
There are some cookies brought out at Christmas time that you rarely see the rest of the year. For example, Pepperidge Farm offers like gingerbread men over the holidays. There is a company called Royal Dansk that sells wafer cookies. Have you seen them? They come in a small round tin and each cookie is a thin pancake sized cookie that is rolled up into a little straw sized cookie and then filled with a flavored creme. My favorite are the vanilla wafers filled with vanilla creme. But they have several others and they are all very tasty with a nice cup of hot tea on a winter’s night.
Putting up the Tree
Looks like I can’t put off getting my Christmas tree put up and decorated. Here it is the 9th already. There are only two more weekends left to shop for Christmas after this weekend. I need to get the tree out of the attic and set it up. Thank God it has the lights already on it and all I have to do is toss some colored balls and candy canes on it. That will take me all morning, though. Maybe it will help get me in the Christmas spirit once it is up and lit.
Red Ribbon
This morning while getting dressed I found my red ribbon that I wore as a lapel pin last year for World AIDS Day. The red ribbon is to raise awareness for HIV and AIDS. So, I’ll pin it on my shirt collar today and encourage people that I see to get the facts about AIDS and to have compassion for the victims of this horrible disease.
